Gluten Free Cheesecake

I think everyone needs to have a great cheesecake recipe that they have that is fool proof.  My sister in law is the queen of cheesecakes and she truly makes the best ones.  I didn't have to alter this recipe at all except for the gluten free graham cracker crumbs.  This recipe is perfect and turns out amazing every time. It is not hard to execute and you can add any type of fruit topping to make it just how you want.  The texture is just perfect and the fruit balances out the rich cream cheese.

Cheesecakes are really great for anytime of the year and for really any occasion.  They are also welcome at any party and everyone is always happy to see a cheesecake.  My husband in particular is a huge cheesecake fan and he loved this.  He was thrilled when I said I was going to be making a cheesecake.  You might be deterred by the multiple baking times and try a no bake cheesecake but I wouldn't recommend it.  I don't really like the no bake cheesecakes because I just don't think that they have the right texture. This has the perfect texture and it's really not difficult to do the two bake times.
I also really recommend lining the pan with parchment paper.  It can be scary trying to take it out of the pan but the parchment paper takes the fear out and it just takes a minute to make sure that your pan is lined and ready to go. The one problem that I do find is that sometimes it can drip during baking and so I would recommend putting foil on the bottom or putting the pan on a cookie sheet so that it doesn't drip all over your oven.
There are a couple of brands that make gluten free graham crackers and I have been able to find them at Walmart, and multiple grocery stores.  Kinnikinnick Foods makes gluten free graham style crumbs which was just a lot easier than having to crush up my own but it really isn't a big deal to make your own crumbs from the full size crackers.  It's really easy to just put the crackers in a food processor or in a plastic bag and use a rolling pin to crush them.

Gluten Free Cheesecake

This decadent and creamy dessert is sure to please everyone!

ingredients:

Crust
  • 1 1/2 cups gluten free graham cracker crumbs
  • 1/4 cup powdered sugar
  • 7 tablespoons unsalted butter, melted
  • 1 teaspoon cinnamon
Filling
  • 2 lbs cream cheese
  • 3 eggs
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • pinch of salt
Sour Cream Topping
  • 1 1/2 cups sour cream
  • 2 tablespoons sugar
  • 1/2 teaspoon lemon juice
Strawberry Sauce (Optional)
  • 2 cups fresh strawberries
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 3-4 strawberries for decorating

instructions


  1. Preheat oven to 370 degrees F. Grease and line 9 inch springform pan with parchment paper.
Crust
  1. Combine gluten free graham cracker crumbs, powdered sugar, cinnamon, and melted butter in a large bowl. Stir until fully combined.
  2. Press crumb mixture onto bottom and 2 inches up side of prepared pan. Refrigerate for 1 hour.
Filling
  1. Place cream cheese, eggs, and sugar in bowl of mixer. Mix until fully combined on medium speed. Once combined, add lemon juice and salt. Continue to mix until smooth
  2. Pour mixture into pan and smooth top. Bake for 20 minutes.
Sour Cream Topping
  1. Increase oven temperature to 425 degrees F. 
  2. Combine sour cream, sugar and lemon juice in medium sized bowl. Spread on top of baked cheesecake and bake for an additional 6-8 minutes. Cool completely.
Strawberry Sauce (Optional)
  1. Wash and hull strawberries. Add strawberries and sugar to blender or food processor. Blend until fully pureed.
  2. Add strawberry sauce to medium pan and add cornstarch. Cook on medium until thickened.
  3. Strain sauce after thickened to remove any lumps. Let cool.
Assembly
  1. Once cheesecake and sauce are both cool spread strawberry sauce on top of cheesecake and let it drip down the sides. Add strawberries on top for decoration. 
  2. Store in refrigerator or serve immediately
