Gluten Free Salted S'more Truffles
One of the things that my family loves to do is go camping. Living in Southern California means that we can pretty much go camping year round and we take advantage of that. We have the beach and the mountains pretty close so we have lots of choices for beautiful camping spots. The one thing that we are all adamant about when we go camping is s'mores. It is kind of a must when you are camping and my kids will never let me forget the essentials. When I was first diagnosed, gluten free graham crackers were pretty much non-existent but now, you can find them in lots of different places. The ones that I used in this recipe, I found in Wal-mart. Since they are a whole lot easier to find, I thought that this recipe would be perfect for a fun and easy dessert that would have all the flavors of one of our favorite treats.
Whenever I go to a party or to dinner at someone's house, I always offer to bring a dessert with me. I love to bring things that you don't have to cut when I know that there are going to be gluten filled desserts as well. It feel like it cuts down on cross contamination because no one is going to accidentally share a knife with your dessert. It is not very fun when you go to all the trouble to make a gluten free dessert and then you aren't able to eat it when someone shares a knife. These truffles are great because no one will be doing that and they just taste amazing.

Gluten Free Salted S'more Truffles
ingredients:
- 3 cups gluten free graham crackers, crushed into fine crumbs
- 2 cups mini chocolate chips
- 1/2 teaspoon salt
- 16 ounces marshmallow fluff
- 10 ounces dark chocolate candy wafers
- coarse salt, for topping
instructions
- Crush graham crackers into a fine crumb and pour into a medium bowl
- Add the mini chocolate chips, 1/2 teaspoon salt, and marshmallow fluff
- Mix until well combined
- Roll the mixture into 1-inch balls and place on parchment paper lined baking sheet
- Freeze for 15 minutes
- Add dark chocolate wafers to a microwave safe bowl. Microwave chocolate for 30 second increments until fully melted.
- Remove balls from freezer and individually roll in melted chocolate to coat.
- Place back on a parchment paper lined tray and sprinkle with coarse salt.
- Chill until firm
