Gluten Free Cookies and Cream Cookies
Cookies and Cream used to be one of my favorite ice cream flavors but that is now off the table so I love to try and add that flavor to things like cookies or cake. It may seem weird to take a cookie and make another cookie with them but these are so good and so much better than just the chocolate sandwich cookies on their own. If you are looking for something fast to whip up but want to make a change from the classic chocolate chip cookies then these are absolutely perfect. They have very few ingredients and come together before you know it.
Cookies are a staple in my house and I am constantly trying to come up with different flavors to shake things up. These are a great way to make an easy cookie but change it up a little bit. I also love that these are egg free and you can safely eat some of the cookie dough without worrying about getting sick which is pretty much the best part. It also doesn't matter what kind of gluten free chocolate sandwich cookie that you use because they all taste the same when they are put in these cookies. I get the cheapest ones that I can find which is usually the Wal-Mart brand and they always turn out fabulous.
Gluten Free Cookies & Cream Cookies
ingredients:
- 4 ounces cream cheese, softened
- 8 tablespoons salted butter, room temperature
- 3/4 cup sugar
- 1 cup gluten free flour blend (I use Bob's Red Mill 1 to 1 Gluten Free Flour Blend)
- 10 gluten free chocolate sandwich cookies, crushed
instructions
- Preheat oven to 350 degrees F.
- In a mixing bowl blend, cream cheese, butter, and sugar until fully combined.
- Add flour to cream cheese mixture and continue to blend together until fully combined.
- Add crushed cookies to the mixture and gently fold together. Ensure the cookie batter is fully mixed.
- Cover with plastic wrap and chill in refrigerator for 30 minutes or until batter is firm to touch.
- Roll batter into small balls and place on a parchment lined baking sheet. Using your fingers press down on the dough balls to help form a cookie shape.
- Bake for 12-15 minutes or until cookies turn golden brown on bottom. Place cookies on a cooling rack and rest for at least 5 minutes.
