Kimberly's Gluten-Free Kitchen

I'm back! It has been so long since I have done a post and it feels good to get back at it. I have been taking some classes these past few months and since my kids, along with all of yours, are home right now, it made doing anything extra impossible. As soon as I took my last final, I couldn't wait to get into the kitchen. I have been dreaming about what I was going to make and I came up with these scrumptious Christmas cookies.  They are everything good and delicious about Christmas packed into one cookie. They have gluten free chocolate sandwich cookies, mini marshmallows and crushed candy canes. They taste amazing and they are just packed with delicious Christmas flavors.
I don't know about you but I have lots of helpers in my kitchen. The minute my kids hear the mixer start, they all run into the kitchen and want to help. Sometimes I love it and sometimes all I want to do is hide in my kitchen and bake just the way that I want to. My kids especially love to help during the holidays and that gets hard when there is so much baking to do. I thought these cookies would be perfect to have a little extra help with.  Kids will love making these cookies and they aren't too hard to make with little helpers. My kids loved helping me crush the cookies and candy canes and thought that was just the best. The candy canes make them look like Christmas cookies without getting tubs of frosting out and having frosting from one end of the house to the other. These are simple but delicious Christmas cookies that are just as much fun to eat as they are to make!

I have seen a version of these cookies with white chocolate chips in them and that would be great to add instead of the marshmallows if you are a white chocolate fan. I just never got on the white chocolate band wagon so I thought that mini marshmallows would be so fun and it would make them nice and gooey. I was so right! The marshmallows melted in the oven and just gave the perfect amount of ooey gooey to these cookies. The marshmallows do make them spread a little bit in the oven so when I took them out, I just used a knife to bring them back together. 
I love the idea of a cookie within a cookie. I thought the gluten free chocolate sandwich cookies would be so good in these. They add a bit of chocolate to them and some fun texture. They just made the perfect addition along with the candy canes. It is just a subtle peppermint flavor to make them really feel like Christmas. The vanilla pudding mix makes these cookies so soft and delicious but they still hold their shape and are sturdy. I think these cookies are the absolute perfect Christmas cookie. I really couldn't think of another name for them because they just remind me of Christmas. Check out the video to see exactly how I made them!

Gluten Free Christmas Cookies

These Christmas cookies are packed with all things that Santa loves. They have marshmallows, chocolate sandwich cookies and candy canes. They are sure to be a hit during the holidays and the best thing is that they are gluten free for all to enjoy!

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup vanilla pudding mix
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups 1 to 1 gluten free flour blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped gluten free chocolate sandwich cookies
  • 1 cup mini marshmallows
  • 1/2 cup crushed candy canes

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In the bowl of your mixer,  add butter and sugars. Beat until creamy, about 2 minutes. Add vanilla pudding mix, eggs and vanilla.
  3. In a medium bowl add the gluten free flour, baking soda and salt. Whisk together until combined.
  4. Add the dry ingredients slowly to the wet ingredients until fully combined. Stir in gluten free chocolate sandwich cookies, mini marshmallows, and crushed candy canes.
  5. Drop cookie dough in rounded tablespoons onto prepared baking sheet. Bake for 10-12 minutes until slightly golden along the edges of the cookies. Remove cookies from oven and let cool slightly before removing and transferring to a cooling rack to cool completely. 
  6. Serve and enjoy. Store in airtight container.

I am a huge fan of cinnamon rolls.  One of my very favorite memories growing up was that when we were shopping at the mall, my mom and I would always stop by Cinnabon and get a cinnamon roll to share.  It was just the two of us and I loved that time together.  Well, the days of getting cinnamon rolls in the mall are long over for the both of us as we both have Celiac but that hasn't altered my love of them.  One of the first things that I wanted to conquer when I decided to start a blog was cinnamon rolls.  I am pretty happy with my recipe that I created a few years ago and if you are looking for a good one my gluten free cinnamon roll recipe is absolutely delicious.  I just love the flavors and when I was thinking about cookies for the holidays, I thought a cinnamon roll cookie would be perfect. 
If you have worked a lot with gluten free flour then you know that it is not as strong or as workable as regular wheat flour.  Gluten is what makes the wheat flour so stretchy and strong so when you are trying to work without that gluten, it can make things quite difficult.  Sometimes it can break easily, fall apart to just disintegrate in your hands. (I have had all those happen to me.) I wanted to make sure this dough would hold up and would work when you tried to roll it up because I wanted them to look like a cinnamon roll.  I was really pleased with how these turned out.  They have a great swirl and it wasn't too difficult to roll them up.  In this recipe you need to chill the dough twice and you really don't want to skip those steps.  Chilling the dough keeps it firm for when you are rolling it out and cutting them out.  You really want the dough to hold it's shape so that it is easier to work with. I also rolled them out on a piece of parchment paper which I really recommend doing.  It made it much easier it roll up and I used parchment paper to get a tight roll.  If you just rolled them out on the counter, it might not work and you might be stuck with a very big mess.  Just watch the video down below if you need any help with that part.  
The glaze for this cookie really makes a big difference as well.  I wasn't sure if they would need a glaze but I thought that they would look better if they had one so I tried it out.  I ate them with and without and the glaze is so good and adds just the right texture and flavor to make these cookies a knock out.  I really recommend using the glaze and not skipping it.  I put it into a piping bag and just quickly piped the glaze onto the cookies but a fork or a spoon would work good too to drizzle it on.  You could also dip the cookies into the glaze if you want to do that as well.  There are lots of options to get the best cookie for you

 If you are a big cinnamon roll fan, then these cookies are a must for you to make.  They might look difficult but if you follow the steps that I laid out and used some of my recommendations then you will be whipping them up in no time.  My advice to all gluten free baking is to be patient and to not rush through steps.  Whenever I do that, I am bound to make a mistake and will have to start over so be patient and go slow until you really get the feel of what you are doing.  Let me know how yours turn out. Gluten Free Cinnamon Roll Cookies

If you love a good cinnamon roll, then you will love these cinnamon roll cookies. They are a buttery and delicious sugar cookie rolled up to look just like cinnamon rolls. They taste like them too and you will wow all your friends and family with these amazing cookies.

ingredients:

Cookies
  • 3 cups gluten free 1 to 1 flour blend
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 tablespoon milk
  • 1 teaspoon pure vanilla extract
Filling
  • 2 tablespoons melted butter
  • 1/4 cup packed brown sugar
  • 2 teaspoons cinnamon
Glaze
  • 1 1/4 cups powdered sugar
  • 2 tablespoons milk

instructions:

How to cook Gluten Free Cinnamon Roll Cookies

  1. Heat oven to 350 degrees F. and line two baking sheets with parchment paper. In a large bowl, whisk together flour, baking powder, and salt.
  2. In the bowl of a stand mixer, beat butter and sugar until fluffy and pale in color. Add egg, milk, and vanilla and beat until combined, then add flour mixture gradually until totally combined. Chill for 30 minutes.
  3. Once chilled, divide dough in half and and on a piece of parchment paper, roll each piece of dough into a rectangle about 1/4" thick.
  4. In a small bowl, combine brown sugar and cinnamon. Brush rectangles with melted butter and sprinkle with sugar mixture. Tightly roll up each rectangle into a tight log.  Wrap in plastic wrap and chill for 30 minutes. 
  5. Slice into 1/2"-thick slices and transfer to prepared baking sheets, spaced 1" apart. Bake until lightly golden on the edges, 12-14 minutes.  Let cool.
  6. In a small bowl, combine powdered sugar with milk and place in piping bag and drizzle over cookies or drizzle with fork or spoon over cookies.
  7. Let glaze dry and serve immediately. Store in airtight container.

I love citrus flavors, especially lemon and lime flavors. If I have an option for a flavor for candy, I usually always go with the citrus flavors. So when Aldi came out with lemon and lime cake mixes, I was all over it.  I don't know if it is just me but when May comes around and Aldi releases all their limited gluten free line, I stock up.  Like clean out my cupboards and go to town kind of stocking up.  I get as many of each product as I can find and then I use them throughout the year.  If you don't know what Aldi is or don't have one close to you, I am so sorry!! It is a grocery store that actually has affordable gluten free items.  They have their own gluten free line and each May, during Celiac Awareness Month, they release of bunch of products that are only available for a few of weeks.  
So since I had a bunch of cake mixes, I thought it would be fun to come up with a cake mix cookie recipe that would use the cake mixes that I got and use them in a different way.  Let me tell you, these cake mix cookies are about as easy as it gets.  I also have a Strawberries n' Cream Cake Mix cookie recipe that I used to create this recipe.  They are so good so I thought that a lemon and lime version would be just as good and I was so happy with how they turned out.  
If you are like so many people and not a very experienced baker, these cookies are a great place to start.  They are so easy and to make and it would be very hard to mess them up.  They are also a great dessert if you are in need of one super fast.  If you forgot that you offered to make a dessert and you need one right away, these take less than an hour from start to finish. Also, if you don't have a lemon or a lime cake mix, don't fret. You can make these with a regular cake mix. Just do everything the same. You could use food coloring if you wanted to, to make them yellow and green or you could leave that part out. It's totally up to you.
I just love how refreshing and light these cookies are.  If you haven't made cake mix cookies before, you are missing out! They are light and fluffy and absolutely delicious. If you are new to my blog, you might not know that I love cake mixes.  I think that they are a great tool to use in your kitchen to make all sorts of fun desserts.  They make it a lot easier and it's amazing all the fun things you can make with a yellow cake mix.  You should explore and look around to find great recipes because I have tons that you would be shocked that start with a cake mix. These light and fluffy cookies are made from a gluten free lemon cake mix and they are just packed full of that tart citrus flavor!

Some of my very favorite desserts are just the simple chocolate chip cookie and the brownie.  You really can't go wrong when making either of these desserts and they really are classics for a reason.  Everyone loves them and they are pretty easy to make.  This recipe sort of combines both of them into a very delicious blondie! When I told my family that  I was going to be making blondies, they had no idea what I was talking about until I whipped them up, in no time at all, and had them try them.  They were sold!  My kids loved them and I loved how fast I could make them with just the ingredients that I already had in my cupboard.  It was a win win for everyone!
 When they come out of the oven, it really looks like a giant chocolate chip cookie and it kind of tastes like one with the consistency of a brownie.  They are so good!  You could really have fun with these and add whatever mix ins that you and your family would love. These would be delicious with nuts, cranberries, raisins, different types of candies, or really anything you can think of. The batter is kind of a blank slate and it would be fun to play with these and really add different things to add fun flavors. Just make sure that whatever you are using is gluten free!
 My favorite thing about this recipe is just how easy it is and how not time consuming they are to make.  These are perfect to make with children because depending on how old they are, kids could really make these practically all by themselves. My boys love to bake with me but sometimes it is not as fun for them when I have to do the majority of the work but with this recipe, I can sit back and have them take over.  It is a fun way to have your kids get baking with you without so much of the stress.
 This recipe also makes a full 13x9 inch pan which I also love.  One thing that drives me crazy about gluten free brownie mixes is that it only makes a tiny pan worth of brownies.  When I bake, I usually bake for lots of people so I like recipes that I can make for everyone.  These would be great for school functions as well, like bake sales or parties in your kids classrooms.  If your child is having a birthday and you want to bring treats for school, these are perfect because they will make enough for everyone to enjoy.
If you need to make these dairy free, just switch out the butter for some vegan butter  and make sure you have dairy free chocolate chips and they easily become gluten free and dairy free.  These really are such a great and easy dessert to make and just writing this blog post is making me want to go and whip them up.  They are great if you are new to gluten free baking and want to ease in a bit because it really doesn't get any easier than this! Gluten Free Blondies

If you love brownies but are looking to change it up a bit, these blondies are perfect! They are a cross between a brownie and a chocolate chip cookie and taste as good as they sound!

ingredients:

  • 1 1/2 cups packed dark brown sugar
  • 1/2 cup butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups 1 to 1 gluten free flour blend (I use Bob's Red Mill 1 to 1 Gluten Free Flour Blend)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips

instructions:

How to cook Gluten Free Blondies

  1. In the bowl of your mixer, combine dark brown sugar, butter, eggs, and vanilla just until blended.  Combine the gluten free flour, baking powder and salt; add to brown sugar mixture until fully combined. Stir in chocolate chips.
  2. Spread into greased 13x9 in. baking pan. Bake at 350 degrees F. until a toothpick inserted in the center comes out clean, about 18-20 minutes. Cool on a wire rack. Cut into bars.

I love to make cookies. They are easy to make and don't require anything else like frosting to make them absolutely perfect.  I love to have a nice warm batch of cookies waiting for my kids when they get home from school or whip some up when we get invited to a friend's house for dinner.  They are perfect for the holidays or anywhere where you need to bring a dessert.  I love to have options on what kind of cookies I am going to make so that I can switch it up and keep things interesting.  The snickerdoodle is such a classic cookie that just makes everyone so happy.  Most people have grown up eating these delicious cookies and having a recipe where you can continue to enjoy them is a must.

I love cinnamon sugar and so do my kids.  They love a little cinnamon sugar sprinkled on some toast so they go crazy for these cookies.  They are so good, they are chewy, soft and absolute perfection.  Best part is they are easy to make and come out perfect every time.  Everyone will love them and they only thing you might need to do is slow them down coming back for more.  They are such a versatile cookie and can be made for any occasion or any holiday and be perfect.  They don't have a lot of ingredients so most people will love them.
The cinnamon sugar is just amazing.  What is better than a cinnamon cookie? One rolled in cinnamon sugar before baking! I love the texture that the cinnamon sugar gives to the cookies.  It just gives them a nice bite and extra flavor on this amazing dessert.  I usually always have the ingredients on hand so it really makes whipping up a batch of these a breeze.  I really recommend whipping that butter maybe a little longer than you are used too.  I didn't do that for a long time but I have seen a difference in the cookies where I spend a little more time whipping that butter.  I think that they are lighter and fluffier.  Sometimes people have a problem with their cookies going flat and this could be the problem.  Really whip that butter up and also sift the flour.  It may seem like a dumb step but it is necessary to get perfect cookies.  It really doesn't take very much time and it makes a big difference.
Lastly, make sure to enjoy these delicious cookies and share them with those around you so that people can really let go of the idea of gluten free baked cookies tasting gross. Or maybe we should make people think they taste gross and keep all the cookies for ourselves?! I actually think that is a better idea so keep spreading the lies that gluten free baked goods are disgusting and we will all be in the corner agreeing and enjoying all the amazing goodies.

Gluten Free Snickerdoodles

Such a classic and delicious cookie that is packed full of cinnamon sugar. These cookies are soft and chewy and absolutely perfect!
prep time: 10 minscook time: 10 minstotal time: 20 mins

ingredients:

Cookie Dough
  • 1 cup unsalted butter, softened
  • 2 teaspoons pure vanilla extract
  • 1 cup sugar
  • 1/3 cup brown sugar
  • 2 large eggs
  • 3 cups gluten free flour blend (I use Bob's Red Mill 1 to 1 Gluten Free Flour Blend)
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
Cinnamon Sugar Mix
  • 1/4 cup sugar
  • 1 tablespoon ground cinnamon

instructions

  1. In a large mixing bowl or bowl of a stand mixer, whip butter with vanilla until light and fluffy, around 2 min.
  2. Add the sugar and brown sugar and mix until well incorporated.
  3.  Add the eggs and stir until thoroughly incorporated.
  4. Sift the gluten free flour, cream of tartar, cinnamon, baking soda, and salt into the dough. Combine until evenly mixed. Cover with plastic wrap and chill for at least 30 minutes.
  5. Preheat the oven to 375 degrees F.
  6. In a small bowl, mix together the ingredients for the cinnamon sugar mix until evenly incorporated. 
  7. Using your hands roll dough into ping pong sized balls and  dip into cinnamon sugar mixture and roll around covering the dough ball completely.
  8. Place the cookie dough on parchment paper-lined baking sheet and bake for 10-12 minutes.
  9. Allow to cool and serve.

Cookies and Cream used to be one of my favorite ice cream flavors but that is now off the table so I love to try and add that flavor to things like cookies or cake.  It may seem weird to take a cookie and make another cookie with them but these are so good and so much better than just the chocolate sandwich cookies on their own.  If you are looking for something fast to whip up but want to make a change from the classic chocolate chip cookies then these are absolutely perfect.  They have very few ingredients and come together before you know it.
 I made these for a family gathering and everyone kept asking if they were really gluten free.  They just couldn't believe that they were gluten free.  I also made a double batch of them to bring over and they were all gone by the end of the night.  They are so addicting and you really couldn't just eat one.  All the kids and the adults loved them.  They are chewy and sweet and really satisfy those dessert cravings.  The cream cheese gives them a great texture and flavor and everyone will be asking you for the recipe.
Cookies are a staple in my house and I am constantly trying to come up with different flavors to shake things up.  These are a great way to make an easy cookie but change it up a little bit.  I also love that these are egg free and you can safely eat some of the cookie dough without worrying about getting sick which is pretty much the best part. It also doesn't matter what kind of gluten free chocolate sandwich cookie that you use because they all taste the same when they are put in these cookies.  I get the cheapest ones that I can find which is usually the Wal-Mart brand and they always turn out fabulous.

Gluten Free Cookies & Cream Cookies

These are amazing cookies that are really a cookie within a cookie. They are so good and so easy to whip up because there are just a few ingredients. They are also egg free!

ingredients:


  • 4 ounces cream cheese, softened
  • 8 tablespoons salted butter, room temperature
  • 3/4 cup sugar
  • 1 cup gluten free flour blend (I use Bob's Red Mill 1 to 1 Gluten Free Flour Blend)
  • 10 gluten free chocolate sandwich cookies, crushed

instructions


  1. Preheat oven to 350 degrees F.
  2. In a mixing bowl blend, cream cheese, butter, and sugar until fully combined.
  3. Add flour to cream cheese mixture and continue to blend together until fully combined.
  4. Add crushed cookies to the mixture and gently fold together. Ensure the cookie batter is fully mixed.
  5. Cover with plastic wrap and chill in refrigerator for 30 minutes or until batter is firm to touch.
  6. Roll batter into small balls and place on a parchment lined baking sheet. Using your fingers press down on the dough balls to help form a cookie shape.
  7. Bake for 12-15 minutes or until cookies turn golden brown on bottom. Place cookies on a cooling rack and rest for at least 5 minutes.
