Gluten Free Stuffing
So growing up I never liked stuffing. I didn't like to eat it and it was probably because I felt so awful after eating it that it just wasn't worth it. After I got diagnosed my mom was so amazing and tried so many different recipes and used so many different bread products to try and make the perfect stuffing for me. She used waffles one year and tried a lot of different breads but now there are so many more options to choose from. Gluten free bread is just so much easier to find and it tastes a lot better than it did 10 years ago. Now there are stuffing mixes which make life so much easier and more convenient to have stuffing with your turkey during Thanksgiving.
Putting it in the crock pot is also so perfect because you can leave it and forget about it until it's time to eat. It also leaves more room in your oven for more good food. I have also found that people that are gluten free and those that are not enjoy this stuffing as well. While it doesn't have the same texture the flavors make up for it, especially if you drench it in some yummy gluten free gravy.
For me I am all about living a happy life and with that comes good food. I want good food in my life and I don't want to feel sad or deprived on holidays. Making this stuffing will make you feel so good and just be happy on this day that is meant to be thankful. We want to have good feelings on this day and enjoy it with our families. - 3 boxes Gluten Free Boxed Stuffing Mix
- 2 cups celery
- 1 large onion
- 3/4 cup butter or margarine
- 1/2 cup flat leaf parsley
- 1 3/4 cups chicken broth
- salt and pepper to taste
