Gluten Free Chocolate Sandwich Cookie Truffles
Gluten free chocolate sandwich cookies are not only delicious to eat but they are super fun to cook with as well. I love that cookies and cream flavor and I am constantly trying to come up with new ways to incorporate it into desserts. I love that they have so many different brands of the gluten free chocolate sandwich cookies and they are super easy to find. Usually any store that carries any kind of gluten free products also carries some brand on gluten free chocolate sandwich cookies. They are easy to find and fun to use to create new desserts. These gluten free chocolate sandwich cookie truffles are so good and so incredibly easy to make.
So white chocolate is really not my favorite. I don't really like to eat it because it is just too sweet but I think these would be so cute if you dipped them in white chocolate candy melts instead of the dark. Just sprinkle with the cookie crumbs that you saved and they will look so cute. You can really use whatever chocolate that you like to make them. Dark chocolate is my favorite so that is what I use to to make them and just use the white chocolate for decoration. You don't have to be perfect with your decoration. Just go back and forth with the white chocolate and it will look great.
These cute truffles are as good as they look and crazy easy to make. They will impress anyone that you make them for and everyone will be asking for the recipes. Gluten Free Chocolate Sandwich Cookie Truffles
ingredients:
- 36 gluten free chocolate sandwich cookies
- 8 oz cream cheese, softened
- 12 oz gluten free chocolate candy melts (use your favorite, dark, white or milk)
- 1/2 cup white chocolate chips for decoration
instructions
- In a food processor or with a rolling pin, finely crush the gluten free cookies, reserving about 2 tablespoons of the mixture for sprinkling on top of the truffles.
- In a large bowl, combine the cookie crumbs and cream cheese, stirring until evenly mixed. Chill the mixture for about an hour or until it can be rolled into a ball and hold it's shape.
- Melt the chocolate candy melts in a large bowl in the microwave in 30 second increments until fully melted.
- Divide and roll the cookie mixture into golf ball-sized balls. Dip the truffles in the melted chocolate and place on a baking sheet lined with parchment paper.
- Melt the white chocolate chips in the microwave the same way as the chocolate candy melts. Decorate the truffles with the melted chocolate by putting it in a piping bag, plastic bottle or a fork and decorate the top with the white chocolate. Sprinkle the reserved cookie crumbs on the top of the truffles before the chocolate hardens.
