Gluten Free Blondies

Some of my very favorite desserts are just the simple chocolate chip cookie and the brownie.  You really can't go wrong when making either of these desserts and they really are classics for a reason.  Everyone loves them and they are pretty easy to make.  This recipe sort of combines both of them into a very delicious blondie! When I told my family that  I was going to be making blondies, they had no idea what I was talking about until I whipped them up, in no time at all, and had them try them.  They were sold!  My kids loved them and I loved how fast I could make them with just the ingredients that I already had in my cupboard.  It was a win win for everyone!

 When they come out of the oven, it really looks like a giant chocolate chip cookie and it kind of tastes like one with the consistency of a brownie.  They are so good!  You could really have fun with these and add whatever mix ins that you and your family would love. These would be delicious with nuts, cranberries, raisins, different types of candies, or really anything you can think of. The batter is kind of a blank slate and it would be fun to play with these and really add different things to add fun flavors. Just make sure that whatever you are using is gluten free!
 My favorite thing about this recipe is just how easy it is and how not time consuming they are to make.  These are perfect to make with children because depending on how old they are, kids could really make these practically all by themselves. My boys love to bake with me but sometimes it is not as fun for them when I have to do the majority of the work but with this recipe, I can sit back and have them take over.  It is a fun way to have your kids get baking with you without so much of the stress.
 This recipe also makes a full 13x9 inch pan which I also love.  One thing that drives me crazy about gluten free brownie mixes is that it only makes a tiny pan worth of brownies.  When I bake, I usually bake for lots of people so I like recipes that I can make for everyone.  These would be great for school functions as well, like bake sales or parties in your kids classrooms.  If your child is having a birthday and you want to bring treats for school, these are perfect because they will make enough for everyone to enjoy.
If you need to make these dairy free, just switch out the butter for some vegan butter  and make sure you have dairy free chocolate chips and they easily become gluten free and dairy free.  These really are such a great and easy dessert to make and just writing this blog post is making me want to go and whip them up.  They are great if you are new to gluten free baking and want to ease in a bit because it really doesn't get any easier than this! Gluten Free Blondies

If you love brownies but are looking to change it up a bit, these blondies are perfect! They are a cross between a brownie and a chocolate chip cookie and taste as good as they sound!

ingredients:

  • 1 1/2 cups packed dark brown sugar
  • 1/2 cup butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups 1 to 1 gluten free flour blend (I use Bob's Red Mill 1 to 1 Gluten Free Flour Blend)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips

How to cook Gluten Free Blondies

  1. In the bowl of your mixer, combine dark brown sugar, butter, eggs, and vanilla just until blended.  Combine the gluten free flour, baking powder and salt; add to brown sugar mixture until fully combined. Stir in chocolate chips.
  2. Spread into greased 13x9 in. baking pan. Bake at 350 degrees F. until a toothpick inserted in the center comes out clean, about 18-20 minutes. Cool on a wire rack. Cut into bars.
