Gluten Free Strawberry 'n' Cream Cake Mix Cookies

Having 3 boys we don't see a lot of pink in my house but my boy's love strawberries! My boys will happily overlook the pink color of these cookies to enjoy the amazing strawberry flavor.  These cookies not only taste amazing but they are so easy to make.  Using a cake mix makes it so easy to whip these up in just a few minutes. The fresh strawberries make them have the perfect flavor and no one will guess that these are gluten free.

During strawberry season we eat as many strawberries as we can.  Strawberries just remind me of spring and summer and I just love eating them as many ways as I can. These cookies are perfect because they hold onto the delicate flavor of the strawberries perfectly.  The light and fluffy cake mix just makes the perfect compliment for this spring dessert.
These cookies are just so easy because you just dump it all in a bowl and mix them up.  Adding the cream cheese gives it a great creamy flavor but just make sure that you don't over mix the cream cheese because you want to see that cream cheese swirl.  It can also be hard to determine if these cookies are done but make sure you don't over cook these.  They are supposed to be super soft and light in texture so be careful to not over bake them.

Gluten Free Strawberry 'n' Cream Cake Mix Cookies

These strawberry cookies are so light and fluffy and just perfect for spring and summer!

ingredients:


  • 1 (15 oz) gluten free yellow cake mix
  • 3 tablespoons strawberry gelatin
  • 1/2 cup strawberries, chopped
  • 1/3 cup oil
  • 2 eggs
  • 1/2 cup cream cheese

instructions


  1. Combine cake mix, strawberry gelatin, strawberries, oil, and eggs in a mixing bowl.
  2. Add in cream cheese and lightly mix allowing the cream cheese to still be visible and not all the  mixed in.
  3. Scoop golf-sized balls of cookie dough and transfer to a parchment paper-lined baking sheet.
  4. Bake at 350 degrees for 10-12 minutes. Let cool.
  5. Store in airtight container.
