Berry Pie Recipe

My mom has made this recipe for years and when I became gluten free, it was the first pie that I made.  I tweaked it a little bit with adding raspberries but you can play with it too. My mom loves to add cherries and it tastes great too.  I really recommend using the Oregon berries because they taste better than any other brand you can find.  Make sure the berries that you use are berries in syrup and not a berry pie filling.  They are different and the pie filling will not work with this recipe.  The berries can be tricky to find but you can always buy them here Oregon Fruit Blackberries in Syrup, 15-Ounce Cans (Pack of 8) Oregon Fruit Red Raspberries in Syrup, 15-Ounce Cans (Pack of 8). Berry Pie
Great berry pie recipe that is both sweet and tart. Pair this with a gluten free pastry and you have the perfect dessert.
Ingredients
  • double crust double crust gluten free pastry
  • 2 cans blackberries (drained, reserve syrup from 1 can)
  • 1 can raspberries (drained, reserve syrup from half a can)
  • 6 tablespoons sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 2 tablespoons butter
  • 2 tablespoons milk
  • 2 tablespoons sugar for dusting
Instructions
1. Preheat oven to 350 degrees.2. Drain the berries and reserve the syrup from 1 can of blackberries and half a can of raspberries.3. Combine half the sugar and cornstarch and stir into the berry syrup.4. Cook over medium heat, stirring constantly until thickened.5. Remove from heat and gently stir in the rest of the sugar, berries, and lemon juice.6. Let stand while preparing pastry.7. Line a 9 inch pie pan with pastry and fill with fruit filling. Dot with butter.8. Put top crust onto pie and brush on milk and sprinkle with sugar.9. Cut vents into pie crust.10. Bake for 30 minutes or until filling is bubbly and crust is golden brown.
