Gluten Free Version of Disneyland's Clam Chowder

If you have ever been to Disneyland and tasted their clam chowder, you know it is the best.  Like the best thing you have ever eaten, ever.  It is so good and creamy and really hits the spot on a cold night when you are visiting the famous mouse. I live about an hour from Disneyland so you can imagine that I spend a lot of my time there.  Growing up, we always used to get clam chowder every time we went.  After I became gluten free, I was so sad because I couldn't eat it anymore.  After my last visit to Disneyland, I was determined to come home and make a gluten free version and let me tell you, this recipe does not disappoint.  Though it has been years since I was able to enjoy this creamy soup, all the memories came flooding back after just one bite.  


All the flavors just take over and your mouth does a happy dance after you dive into it.  Now if you haven't made a roux before, don't be scared.  It really is super easy to make and the gluten free flour actually works really well because of all the starches.  Make sure to watch the video down below and you will really see why it is so easy.

Canned clams are really easy to find and you can find them in your local grocery store, Walmart, Target but if you have a hard time you can purchase them here Snow's by Bumble Bee Chopped Clams Juice, 6 Count.  The bell peppers can be any color that you want.  I like red, yellow and orange bell peppers so much better than green so that's what I used in this recipe but green would work just fine too.  The flour that I used was Bob's Red Mill Gluten Free 1-to-1 Baking Flour, 5 Pound and it really is my favorite for any recipe so I recommend this over any other gluten free flour or flour blend.  

Now, the bread that you see in the pictures might not look like gluten free bread but it is! Schar makes a gluten free baguette that is so amazing and soft.  I didn't even have to toast it to make it edible. Gluten Free Version of Disneyland's Clam Chowder
Disneyland has the very best clam chowder and now you can make it gluten free! it is
Ingredients
  • 4 cups potatoes
  • 2 bell peppers, any color, chopped finely
  • 1 onion, diced
  • 1/2 cup celery
  • 1 stick butter
  • 1/2 cup gluten free flour
  • 2 1/2 tablespoons vegetable oil
  • 4 cans chopped calms with juice
  • 2 cups heavy cream
  • 1 cup clam juice
  • 1 cup chicken broth
  • 1 teaspoon white pepper
  • 1/2 teaspoon thyme
  • pinch of nutmeg
  • salt and pepper to taste
Instructions
1. Make Roux. Combine butter and gluten free flour over medium/ low heat for about 5 minutes until golden brown. Set aside.2. Heat oil and cook vegetables until potatoes are tender.3. Add cream, clams, clam juice, chicken broth, and spices.4. Whisk in the roux. 5. Salt and pepper to taste.6. Simmer for 10 minutes.7. Enjoy!
