Red Velvet Cupcakes

Red velvet cupcakes are definitely a favorite in my house.  They are kind of the perfect cupcake because they are so moist, soft and delicious. The red color really makes them fun and both adults and children all love them.  This red velvet cupcake recipe is perfect because you would never know that they are gluten free.  They also are so easy to make because you use a gluten free cake mix. I haven't found that a certain brand of cake mix makes these taste better so I would suggest just finding the cheapest one that you can find.


The chocolate pudding mix really makes this cupcake.  It is what gives it that super moist texture and gets rid of any graininess that you can sometimes find in gluten free cooking.  Cream cheese frosting is a must when it comes to red velvet cake and this cream cheese frosting is the perfect addition to these delicious little cakes. It is so easy to whip up that you won't be tempted to get the store bought kind.  It whips up in minutes and is so good.  
These cupcakes will wow anyone and they will be shocked that they are gluten free.  They stay moist and delicious for days after and you can even freeze them for later.  Just freeze them in an airtight bag and pop them on the counter to let them defrost.  You then frost them and they are ready to go.  They are great if you have kids that are gluten free and you can just have these on hand when they need a treat. Red Velvet Cupcakes

Soft and moist cupcakes that are perfect for any occasion.

ingredients:

Cupcakes
  • 1 (15 oz) gluten free cake mix
  • 1 (3.5 oz) package chocolate flavored instant pudding mix
  • 1/2 cup unsalted butter
  • 1 cup sour cream
  • 3 eggs
  • 2/3 cup milk
  • 1 tablespoon gluten free red food coloring
Cream Cheese Frosting
  • 8 oz cream cheese
  • 4 tablespoons unsalted butter
  • 3 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract

instructions

Cupcakes
  1. Preheat oven to 350 degrees. Combine cake mix, chocolate pudding mix, butter, sour cream, eggs, milk, and food coloring together in mixer. Beat for about two minutes at medium speed until fully combined.
  2. Once combined, pour cake batter into a lined cupcake pan. Bake for 15-18 minutes or until top springs back when touched. Cool on wire rack.
Cream Cheese Frosting
  1. Place cream cheese and butter in mixing bowl and beat on low speed until combined. Stop machine and add sifted powdered sugar and vanilla and beat until combined. Increase speed to medium and beat for 1 1/2 minutes until fluffy.
  2. After cupcakes have cooled, frost and enjoy. Store cupcakes in airtight container.
