The Best Gluten Free Chocolate Chip Cookies

Chocolate chip cookies seem like the easiest cookie to make but they can prove really frustrating when you don't have the right recipe. I have tried many recipes and not all of them have turned out.  It is so annoying when you put in the effort to make some cookies and they don't turn out how you want.  This recipe is so good and so easy to whip up.  They turn out perfect every time and they are so gooey and delicious.  They are soft and I love to make these with chocolate chunks because they just make them a little more decadent.

I also love to put walnuts in my cookies but they are definitely optional.  My husband loves raisins in his chocolate chip cookies so you can play with these and add what you like into your cookies.  These are just a great base for making your perfect cookie.  My kids love these and gobble these up as soon as they come out of the oven.  They are the best to eat when they are still warm. They keep well if you store them in an airtight container.

Gluten Free Chocolate Chip Cookies

These soft, chewy cookies are the best gluten free chocolate chip cookies you have ever had!

ingredients:


  • 1/2 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cup gluten free flour blend (I use Bob's Red Mill 1 to 1 Gluten Free Flour Blend)
  • 1/2 teaspoon baking soda
  • 6 oz semi-sweet chocolate chunks or chips
  • 3/4 cup chopped walnuts (optional)

instructions


  1. Preheat oven to 350 degrees F.
  2. In a large bowl, whisk together the sugars, salt, and butter until a paste has formed with no lumps.
  3. Whisk in the egg and vanilla, beating until fully combined
  4. Sift in flour and baking soda, then fold the mixture with a spatula. 
  5. Fold in chocolate and walnuts, then chill for at least 30 minutes.
  6. Scoop the dough with a cookie scoop onto a parchment lined baking sheet.  Bake for 10-12 minutes or until the edges haves started to barely brown.
  7. Cool and enjoy! Store in airtight container.
