Gluten Free Mac 'N Cheese

Over the past few years there have been so many more options when it comes to store bought pasta.  You can find almost any kind of pasta that you are looking for. It is fun to go and make recipes that used to be really difficult to make.  Macaroni and Cheese is one of those dishes because gluten free macaroni is fairly new.  I love Barilla brand pasta and they have a gluten free elbow pasta so it makes it super easy to whip up some homemade macaroni and cheese.  This recipe not only tastes amazing but it whips up in just a few minutes.

This is great when you need a side dish or to bring for a potluck.  It tastes amazing and the Barilla pasta tastes so good that no one will ever guess that it's gluten free.  The only thing that I would recommend is that you don't over heat the milk.  It can cause the milk to curdle and give it a grainy texture.  You can use whatever cheddar cheese that you like.  I love sharp cheddar and that is what I use when I make this but definitely use what you like.  I also really recommend sticking with using whole milk.  It really adds to the flavor and creaminess of the dish.  
Another great thing about this dish is that it tastes even better the next day. Sometimes gluten free pasta doesn't hold up to leftovers but this one does and I actually like it the best on the second day.  It just has the perfect texture and I look forward to it all day when I know that I have it in the fridge to come home to.  Make sure to check out my video down below which shows exactly how I made it and also go to my YouTube channel for more great recipes and product reviews.

Gluten Free Macaroni and Cheese

ingredients:


  • 5 cups whole milk
  • 1 box gluten free elbow macaroni
  • 1/2 cup butter
  • 3 cups cheddar cheese
  • 1/2 cup Parmesan cheese 
  • salt and pepper to taste

instructions


  1. In a large pot on medium-high heat, gently heat the milk to a simmer.
  2. Add the gluten free macaroni and cook until pasta is tender
  3. Once the pasta is cooked, turn off heat and add butter, cheeses, salt and pepper. Stir until butter and cheeses have melted and have created a thick sauce.
  4. Serve immediately. Store in an airtight container in the refrigerator.
