Gluten Free Lemon Bars

We have lots of citrus trees in our backyard and that includes both lemons and limes. When they are ripe, I try to use them as much as possible and that includes making delicious baked treats with them.  I love both lemons and limes and I think that they just add such a wonderful dimension to baked desserts.  I love my lemon desserts tart and full of lemon flavor.  The one thing that I really don't like is a lemon dessert that is too sweet and with not enough lemon flavor.  I don't like it when you bite into what you think is going to be a nice a flavorful lemon dessert and all you can taste is sugar.  This recipe is definitely not that.  I add more lemon juice and lemon zest then most people do because I really want to taste that wonderful lemon flavor.

These lemon bars are so easy to make and they really don't use a lot of ingredients. I use Bob's Red Mill 1 to 1 Gluten Free Flour Blend and I think that it just makes a great crust. The crust is quite simple with just butter, sugar and gluten free flour.  It is a great shortbread crust that adds a good base for the lemon filling. I love working with this flour and it is my go to for all of my recipes.  I love that the main ingredient is sweet rice flour because I think it gives everything a great flavor but is still strong enough to hold up and won't fall apart.  One trick that you might want to try when pressing the crust into the pan, is to keep your hands wet.  The dough is very sticky and keeping your hands wet will keep the dough from sticking to them as you are pressing into your pan.  It will make your life a lot easier and keep the frustration down a bit.
These lemon bars are great to make when you are bringing a dessert to someone's house or event.  I don't think there was a bake sale growing up that didn't include some sort of lemon bar.  These are such a classic dessert and they are that way for a reason.  Most people love the taste of lemon and they will really satisfy everyone.  They are not only delicious but they don't take very long to make and will wow everyone that is lucky enough to get a taste of them.  It is really important that you use real fresh squeezed lemon juice and zest. Nothing takes the place of real lemon juice and using lemon juice from a bottle will not give you the desired flavor that you will be looking for.

Gluten Free Lemon Bars

These lemon bars are tart, buttery and just perfection. If you love lemon then these are a must. You can use lemon or lime for these citrus bars.

ingredients:

Crust
  • 1 cup butter, softened
  • 1/2 cup sugar
  • 2 cups gluten free flour blend (I use Bob's Red Mill 1 to 1 Gluten Free Flour Blend)
Lemon Filling
  • 4 eggs
  • 1 1/2 cups sugar
  • 1/4 gluten free flour blend (I use Bob's Red Mill 1 to 1 Gluten Free Flour Blend)
  • 2/3 cup lemon juice
  • 1 tablespoon lemon zest

instructions


  1. Preheat oven to 350 degrees F. Line a 9x13 inch pan with parchment paper.
  2. Make the crust. In a medium bowl, blend together softened butter,  2 cups gluten free flour and 1/2 cup sugar. Press into the bottom of the 9x13 inch pan.
  3. Bake for 15 to 20 minutes in preheated oven, or until firm and golden.  
  4. Make the lemon filling. Whisk together the 1 1/2 cups sugar, and 1/4 cups gluten free flour. Whisk in the eggs, lemon juice and lemon zest. Pour over baked crust.
  5. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. When the pans have cooled, cut into squares and serve.

  2. lemon bars within a day or so of baking them, there is no need to refrigerate them. Just place the bars in an airtight container, stacking them with a sheet of parchment or wax paper between each layer. But lemon bars can definitely be made ahead- they're great for that. Chukar
