Gluten Free Lemon/Lime Cake Mix Cookies (Dairy Free)

I love citrus flavors, especially lemon and lime flavors. If I have an option for a flavor for candy, I usually always go with the citrus flavors. So when Aldi came out with lemon and lime cake mixes, I was all over it.  I don't know if it is just me but when May comes around and Aldi releases all their limited gluten free line, I stock up.  Like clean out my cupboards and go to town kind of stocking up.  I get as many of each product as I can find and then I use them throughout the year.  If you don't know what Aldi is or don't have one close to you, I am so sorry!! It is a grocery store that actually has affordable gluten free items.  They have their own gluten free line and each May, during Celiac Awareness Month, they release of bunch of products that are only available for a few of weeks.  
So since I had a bunch of cake mixes, I thought it would be fun to come up with a cake mix cookie recipe that would use the cake mixes that I got and use them in a different way.  Let me tell you, these cake mix cookies are about as easy as it gets.  I also have a Strawberries n' Cream Cake Mix cookie recipe that I used to create this recipe.  They are so good so I thought that a lemon and lime version would be just as good and I was so happy with how they turned out.  
If you are like so many people and not a very experienced baker, these cookies are a great place to start.  They are so easy and to make and it would be very hard to mess them up.  They are also a great dessert if you are in need of one super fast.  If you forgot that you offered to make a dessert and you need one right away, these take less than an hour from start to finish. Also, if you don't have a lemon or a lime cake mix, don't fret. You can make these with a regular cake mix. Just do everything the same. You could use food coloring if you wanted to, to make them yellow and green or you could leave that part out. It's totally up to you.
I just love how refreshing and light these cookies are.  If you haven't made cake mix cookies before, you are missing out! They are light and fluffy and absolutely delicious. If you are new to my blog, you might not know that I love cake mixes.  I think that they are a great tool to use in your kitchen to make all sorts of fun desserts.  They make it a lot easier and it's amazing all the fun things you can make with a yellow cake mix.  You should explore and look around to find great recipes because I have tons that you would be shocked that start with a cake mix. Gluten Free Lemon Cake Mix Cookies

These light and fluffy cookies are made from a gluten free lemon cake mix and they are just packed full of that tart citrus flavor!
prep time: 15 Mcook time: 12 Mtotal time: 27 M

ingredients:

  • gluten free lemon cake mix (can use gluten free yellow cake mix)
  • 1/3 cup oil
  • 2 eggs
  • 2 teaspoons lemon zest
  • 2 Tablespoons lemon juice
  • powdered sugar

instructions:

How to cook Gluten Free Lemon Cake Mix Cookies

  1. Combine cake mix, oil, eggs, lemon zest and lemon juice in a mixing bowl
  2. Using a cookie scoop or your hand, form small balls of cookie dough and transfer to a bowl of powdered sugar
  3. Cover dough ball in powdered sugar and transfer to a parchment paper-lined baking sheet
  4. Bake at 350 degrees F.  for about 12-14 min. Remove from oven and let cool.
